    CHAPTER II MEAT INSPECTION We have spoken of the objections to private slaughter- houses on the ground of their sanitary defects and un- suitable situation. We have next to consider what is, in fact, a far more serious objection, and one which concerns, not the individual slaughter-house, but the whole system collectively. Were each private slaughter- house, in its construction and appointments, equal to the best-built abattoir, this objection would still hold good. It consists in the impossibility of proper meat inspection when cattle are slaughtered in a number of .different slaughter-houses scattered over a large area. How is it possible, indeed, for two, or perhaps three, sanitary inspectors, who have many other duties to per- form, to visit, let us say, fifty different slaughter-houses, situated-at considerable distances from each other, and inspect every freshly-killed carcass before the meat is offered for sale ? Slaughtering often takes place on one and the same day in any town, and it is physically impossible for the inspectors to examine meat killed at fifty or more different places in one day.
