As long as the butcher’s shop is smart and trim, we do not trouble to look behind the scenes. The reader will best realize the contrast between our own system and that in vogue abroad from a glance at the accompanying photographs of typical English private slaughter-houses and some of the slaughtering-halls found in abattoirs on the Continent.
